btw BV did you know that Trader Joe’s sells prefab chopped mirepoix in little tubs. you know, for busy urban types on the go. New York’s heard of TJ’s, right?
Well, yes, but it’s not readily available on a weeknight because of the demand/lines at TJ’s. They are often cleaned out of basic popular items at 6pm.

There is not a single recipe for chicken broth that does not contain a requirement for mirepoix. The problem is, so many of the recipes that include chicken stock as an ingredient also require mirepoix. So, that means you are double-seasoning everything. All of these recipes act like you must have mirepoix at that stage of cooking even if you include it in a past or future stage of cooking too.
