There is not a single recipe for chicken broth that does not contain a requirement for mirepoix. The problem is, so many of the recipes that include chicken stock as an ingredient also require mirepoix. So, that means you are double-seasoning everything. All of these recipes act like you must have mirepoix at that stage of cooking even if you include it in a past or future stage of cooking too. ...
